| Taste: | Medium-bodied, calm. The tannins are pronounced but soft. The wine develops slowly in the mouth and is accompanied by cherry aromas. Lingers long.

The care of the blue pinot is demanding, and it is a headache for both the grower and the winemaker. The variety requires a strong, dry, sun-exposed position. Any breath of wind is also welcome to dry the moisture and help keep the berry skins healthy and ripe. Among the red varieties, Pinot Noir produces the most elegant and soft wine, so longer maceration enhances its structure and prepares it for longer maturation in larger wooden barrels.
