Barbera is a variety that settled in Vipava from Piedmont (Italy), thriving on the barren, poor soils of hillsides and hilltops. It ripens later and is considered a 'fickle variety', ripening well only in years when autumn is dry and warm. A slightly longer maceration period is suitable for a mature Barbera, and malolactic fermentation is an indispensable process. It ripens well in wooden barrels for up to two years and retains a distinctive fruity character.
